Fontina is a cheese with a protected designation of origin from the Valle d'Aosta, produced at each milking and aged for at least 3 months. The Producers and Protection Consortium of the Fontina DOP supervises the production of the product and provides for the marking of the compliant wheels. The Milk and Fontina Producers Cooperative is the largest producer that collects, ages and markets. In 1996 it obtained the Protected Designation of Origin from the European Union.
